Heh from pelengas is a delicious appetizer made from fresh fish that will complement not only your home, but also your holiday table.
Many people probably already know what heh is. This is a Korean dish called hwe or ho. For cooking, fresh meat and fish are used, as in this recipe, and a variety of additives in the form of spices and sauces. I suggest making heh from pelengas.
To make the dish tender, juicy and tasty, it is highly advisable to use larger fresh fish so that you can easily separate the fillet from the backbone and remove the skin. In my case, and this was my mistake, the bearings were very small. Because of this, I was unable to separate the fillet and remove the skin. I prepared this dish for the first time, and the end result, that is, pieces of pelengas, soaked and saturated with spices, turned out to be quite tasty. And if I removed the skin and spine, it would be absolutely great. But nothing, the boiled potatoes disappeared in an instant.
Having become familiar with this dish on the Internet, I learned that heh should be very spicy. But since my spicy dishes are not in great demand, I added just a little ground red pepper.
To prepare heh from pelengas, take the following products.

Pelengas – 300 g
Onions – 1 pc.
Garlic – 2 cloves
Red hot pepper - to taste
Ground coriander - to taste
Soy sauce – 2 tbsp.
Table vinegar – 1.5-2 tbsp.
Sugar – 1 tsp.
Vegetable oil – 50 g

1. Clean fresh fish from scales with a special device. Remove the entrails. Rinse thoroughly. If the fish is large, remove the skin and separate the fillet from the backbone. Cut into small portions.
2. Place the pieces of pelengas into a convenient bowl. Add red hot pepper, ground coriander, table vinegar, soy sauce. Stir. Leave to marinate for about 2-3 hours.
3. Peel a large onion. Cut it into thin half rings. Add a little salt and stir so that the onion becomes softer, releases juice and loses its bitterness.
4. After marinating the fish, combine the pelengas with the onion and mix again.
5. Peel the garlic and pass through a press. Add to fish. Immediately pour hot vegetable oil. Stir. Let it brew for about another hour and you are ready to serve.
