Krupenya is a dish of Belarusian cuisine. The most delicious soup, I must admit! And this is considering that there is no meat in it. And the aroma from dried mushrooms is simply magical! This soup can be eaten during Lent.

To prepare cereals with porcini mushrooms, we will prepare the products according to the list.

Ингредиенты

Potatoes - 3 pcs.

Buckwheat - 80 g

Dry porcini mushrooms - 30 g

Onions - 1 pc.

Carrots - 1 pc.

Refined sunflower oil - for frying vegetables

Рецепт

1. Fill the mushrooms with water and set to cook. How long do we cook? About 30-40 minutes.

2. Then strain the broth and add chopped potatoes to it. My potatoes are cut into cubes. Let's cook.

3. Meanwhile, prepare the soup dressing. Chop onions, carrots, mushrooms as convenient. Sauté in sunflower oil.

4. The potatoes are cooked, add the dressing to the broth...

5. ... and immediately washed buckwheat. And cook until the buckwheat is ready.

6. Salt and pepper to taste. Add bay leaf. Ideally, cook the buckwheat until half cooked, then put it in an oven preheated to 180 degrees for 10-15 minutes. I cooked this way and that way. I didn't feel any difference.

7. Krupenya with porcini mushrooms is ready. Serve the soup hot. I served it with yogurt since my family doesn't fast. If you want a completely meatless soup, simply omit it. Bon appetit!
