Ингредиенты

Chicken/chicken fillet - 300-500 g

Marinade:

Soy sauce - 1 tbsp.

Chili sauce - 1-2 tsp. (taste)

Corn starch - 1 tbsp

Noodles - 200 g

Sesame or other aromatic oil - 1-2 tbsp.

Vegetable oil - 2 tbsp.

Green onions - 3-4 pcs.

Ginger root - 5 cm

Garlic - 1 clove

Hot pepper - to taste

Sweet pepper - 2-3 pcs.

Carrots - 0.5 pcs.

Soy sauce - 1-2 tbsp. (taste)

Oyster and other sauces - optional

Sesame oil/sesame seeds - optional

Рецепт

1. Prepare the ingredients.

2. Cut the chicken fillet into thin strips. Add 1 tbsp. l. soy sauce, 1–2 tsp. chili sauce and 1 tbsp. l. starch. Mix well and let sit for a few minutes while you prepare the rest of the ingredients. Starch is one of the restaurant's "secret ingredients"; it thickens the marinade, envelops the pieces of meat and retains moisture inside, which makes the meat very juicy.

3. Boil the noodles until half cooked. Rinse in cold water, changing the water twice. Add a little sesame or other aromatic oil and mix thoroughly.

4. Finely chop the ginger root, garlic, hot pepper and the white part of the green onion. Prepare and cut vegetables into small pieces. I used frozen bell peppers of different colors and carrots, but you can use any vegetables and mushrooms you want.

5. Heat the pan and add 2 tbsp. l. vegetable oil. Increase the heat and heat the oil until light smoke appears on the surface. Carefully add the chicken pieces to the pan and stir-fry for 1-2 minutes until the meat is browned. Cut the meat into thin strips and cook it very quickly in hot oil.

6. Add chopped onion, ginger, garlic and hot pepper and stir-fry for another 1-2 minutes.

7. Add vegetables and fry for another 2-3 minutes. Frozen peppers and thinly sliced carrots cook very quickly. If you want to add ingredients that require longer cooking, remove the meat temporarily and return it to the pan when they are ready.

8. Add noodles to the pan. Pour in 1-2 tbsp. l. soy sauce. You can also add a little oyster and other sauces, 1 tbsp. white wine - but this is optional.

9. Mix everything well and cook for another 1-2 minutes to warm up the noodles.

10. Serve the finished dish sprinkled with a pinch of green onions. You can add a few pinches of toasted sesame seeds or a little sesame oil for flavor.

11. Lo mein is ready! Bon appetit!
