Until you try the Pavlova dessert yourself, you can’t even imagine the taste of this delicacy.
It seems like meringue, what’s wrong with it?! But if you complement it with whipped cream, fresh berries and mint leaves, you get such an airy and delicate euphoria of taste that you can really forget about everything in the world when trying this dessert!
The only thing that distinguishes Pavlova from regular meringue is a light layer of protein cream between two layers of dried egg whites. By the way, strawberries are a must for the Pavlova dessert in Australian cuisine - such a delicacy is served only with this berry. But if they are not available, replace the strawberries with red currants, raspberries, blueberries - whatever suits your taste.

Chicken proteins - 2 pcs.
Powdered sugar - 120-130 g
Lemon juice - 1 tsp.
Whipped cream - 2-3 tbsp.
Strawberries - 4-5 pcs.
Mint - 2-3 stems
Salt - 2 pinches

1. Chicken eggs must be chilled. Separate the whites from them into the bowl of a food processor and start beating them, adding 2 pinches of salt. This will make the whites whip faster.
2. As soon as they double or triple in size, pour in lemon juice and start whisking the powdered sugar, adding it in parts. If you have time, first sift the powder through a sieve.
3. Having poured in all the powder, beat the whites for another 3-5 minutes until thick cream. After turning off the mixer, look at the whisk - the cream should remain on the whisk and not fall down.
4. Spread the protein cream on parchment paper, which is lightly greased with vegetable or butter. Place the paper on a baking sheet and place it in the oven at 80-100C for 15-20 minutes. If you decide to create a separate portion for each guest, then form 4 circles on paper, but dry them for about 8-10 minutes at the same temperature.
5. If your meringue has hardened on top and bottom, but a soft layer remains inside, the meringue for Pavlova is completely ready!
6. Decorate it with whipped cream from a can or whipped cream yourself. Wash the strawberries and cut them into slices along with the tails. Decorate the dessert with them and place fresh mint leaves on top.
7. Serve Pavlova dessert with aromatic tea or coffee without sugar!
