Stuffed and oven-baked vegetables are always a healthy and tasty snack or an independent dish.

I would like to offer you eggplants stuffed with vegetables and ham. This was my first time doing this, but I really liked it. To prepare, we will need eggplants, onions, carrots, tomatoes, garlic, cheese, ham, herbs, vegetable oil, pepper and salt.

Ингредиенты

Eggplants - 3 pcs;

Tomato - 1 piece;

Onions - 1 piece;

Carrots - 1 piece;

Garlic - 3 cloves;

Hard cheese - 70 grams;

Ham - 150 grams;

Dill, parsley - a small bunch;

Salt, pepper - to taste;

Vegetable oil - for frying.

Рецепт

1. Wash the eggplants well and cut them in half, keeping the stem intact. Cut out some of the eggplant pulp.

2. Place them in boiling salted water and cook for 15 minutes.

3. Cut the pulp into cubes.

4. Cut the onion into cubes and grate the carrots. Fry in vegetable oil and add eggplant cubes.

5. Remove the skin from the tomato, cut into cubes and also add to the pan. Next is chopped ham. Fry everything together.

6. Pour the vegetables into a bowl, add the pulp from boiled eggplants and chopped herbs. Squeeze out the garlic. Salt and pepper to taste. Let's try the filling.

7. Fill the eggplant boats with the resulting minced meat. Sprinkle cheese on top.

8. Preheat the oven to 200 degrees and bake the eggplants for 15 minutes.
