Original “pizza” in a frying pan with potatoes instead of flatbread dough and sausage filling.
I think the name "pizza" for this product can be disputed. Although now they are preparing pizza versions that are so far removed from their original or some traditional version that even this one will work!
A potato base is a good idea for those who don't want to fuss with dough, and frying in a pan gives an option for those who don't have an oven or for some reason don't want to turn it on.
The filling may be different. I’ll show you the example of a simple sausage, but the theme is meat, mushrooms, etc. I like to use suluguni as a cheese, it melts well and is quite affordable, and you can take any one to suit your taste (mozzarella, hard or semi-hard varieties and mixtures of them).
To prepare potato-based pizza (in a frying pan), take the ingredients according to the list in the recipe.

Potatoes - 2 pcs.
Onion - 0.5 pcs.
Sour cream - 1 tbsp.
Egg - 1 pc. optional
Boiled sausage - 50 g
Short-cut sausage - up to 50 g
Suluguni cheese - up to 100 g
Tomato - 0.5-1 pcs.
Ketchup - 1 tbsp.
Garlic or Svanetian salt - to taste
Vegetable oil - for frying
Fresh herbs - to taste

1. First of all, prepare all the ingredients for the filling. Because when you start frying the potato base, you will no longer be able to be distracted by anything else! Cut both types of sausage into slices.
2. Also cut the tomato into slices of the desired size.
3. Coarsely grate the suluguni cheese.
4. Finely chop the onion and add sour cream to it in a bowl. Sour cream will give the potatoes a good taste and also prevent them from browning.
5. Coarsely grate the potatoes, add a little Svan garlic salt or chopped garlic and regular salt.
6. If desired, add an egg and stir. I prepared the potato base both with and without eggs - it turns out delicious either way!
7. Heat a frying pan and fry one side of the potato mixture over medium heat in vegetable oil. To do this, simply transfer the grated potatoes from the bowl into the pan and smooth them out. Aim for five minutes or a little longer.
8. Then turn the potato base over to the other side, brush with ketchup and quickly evenly place the filling: sausage and tomatoes.
9. Sprinkle cheese on top.
10. Fry the potato-based pizza in a frying pan over medium heat, covered, until the cheese melts, i.e. about another 5-7 minutes. If desired, sprinkle the finished potato pizza with assorted sausages and tomatoes with fresh chopped herbs. I have this basil from the windowsill.
11. Fast, easy and very tasty potato pizza is ready!
