Delicious buns with raspberry filling will please everyone without exception. We knead the yeast dough with milk and dry yeast, give it time to rise, in the meantime we prepare the berries. Divide the dough into parts, roll it out and lay out the filling.

Then we form beautiful buns and bake them in the oven. Serve buns made from yeast dough with raspberries only after they have cooled, so as not to get burned by the hot berries.

Ингредиенты

Dough:

Milk - 200 ml

Sugar - 3 tbsp.

Vanilla sugar - 10 g

Chicken egg - 1 pc. (+1 piece for greasing the dough)

Vegetable oil - 2 tbsp.

Salt - 0.25 tsp.

Dry yeast - 6 g

Wheat flour - 450-500 g

Filling:

Raspberries - 200 g

Sugar - 10 tsp. (or to taste)

Sesame - 0.5 tsp.

1. Pour warm milk (not higher than 40 degrees) into a deep bowl and dissolve a tablespoon of granulated sugar in it. Then add dry yeast, stir and leave the mixture for 10-15 minutes to activate the yeast - a foamy “cap” should appear on the surface.

2. Beat a chicken egg into a bowl with the dough, add the remaining sugar (2 tablespoons), a pinch of salt and vegetable oil. For flavor, you can also add vanilla sugar or vanillin at the tip of a knife. Mix the mixture with a whisk.

3. Add sifted wheat flour into the liquid base. Add it in small portions, mixing well each time and controlling the amount of flour. Considering that it is different for everyone, you may need a little more or less of it.

4. Knead into a soft, elastic dough that does not stick to your hands. Round it and place it in a deep bowl greased with vegetable oil. Cover the bowl with a towel and leave in a warm place for 1-1.5 hours.

5. During this time, the dough should grow noticeably and increase in volume. Become softer and more pliable.

6. Punch it down and divide it into 10 equal parts. Cover the pieces with a towel and leave for 15 minutes at room temperature.

7. Meanwhile, prepare the filling. Rinse the raspberries in cold water and drain in a colander to drain excess liquid. When the dough has risen slightly, you can begin to form the buns. Roll each part of the dough into a thin flat cake and make two through cuts on it (as in the photo). Place a portion of raspberries and granulated sugar in the center. I added one teaspoon of sugar to each bun, but you can rely on your taste preferences.

8. Fold the cut edges of the cake onto opposite sides so that the berries are in the hole in the center. It should look like a kind of “boat”.

9. Place the pieces in a heat-resistant form covered with parchment. Cover with a towel and let them rise again, 25-30 minutes will be enough.

10. Then brush the surface of the buns with beaten egg, sprinkle with sesame seeds and place in an oven preheated to 180 degrees.

11. Bake raspberry buns from yeast dough for 35-40 minutes, until beautifully golden brown. The exact cooking time will directly depend on the power of your oven. Transfer buns to a metal rack and cool completely.

12. Delicious yeast buns with raspberries are ready.

13. They turn out very tasty and aromatic. They have a beautiful blush on the outside, and a fluffy crumb and juicy berry filling on the inside. Serve them with a cup of tea, milk or compote.
