Coffee cake with raspberries

I treat coffee lovers and those with a sweet tooth to a fragrant cupcake with sweet and sour berries and glossy chocolate glaze.
In addition to raspberries, take blueberries, blueberries or diced strawberries, and if you don’t have natural freshly ground coffee on hand, use a couple of instant coffee sticks. The dosage of products in the recipe is calculated for a rectangular shape with a volume of 1.5 liters, with parameters 31x14x7 cm.

Premium wheat flour - 200 g
Corn flour - 100 g
Baking powder - 12 g
Butter - 150 g
Sour cream from 15% - 50 g
Natural coffee - 15 g
Milk - 40 ml
Sugar - 150 g
Eggs - 3 pcs.
Raspberries (frozen or fresh) - 100 g

1. Beat 100 g of sugar with eggs (the remaining 50 g will be used for glaze).
2. At the same time, melt 100 g of butter and cool to room temperature. We brew strong coffee with milk, be sure to strain and remove the grains.
3. Pour the liquid ingredients (coffee and dissolved butter) into the egg-sugar foam, again work with a whisk for 10 seconds.
4. Add both types of flour: wheat and corn. The latter will give the structure a slight crunch. Knead a homogeneous viscous cake dough. In this case, the mass is painted with a smooth coffee shade.
5. Load a portion of raspberries without defrosting. Excess moisture is not needed, and the berries were washed and dried before freezing. Stir.
6. Fill a heat-resistant container, lining it with slightly oiled parchment. Bake the coffee cake with raspberries for about 40 minutes in a preheated oven at 180 degrees.
7. Prick with a skewer/match and cool.
8. On the top heat, heat the remaining butter, sugar, sour cream of any fat content, cocoa powder - all the time we move it in a circle with a spoon/whisk and completely dissolve the sugar crystals and dry lumps.
9. Cool the finished cupcake with coffee aroma on a wire rack, then pour silky chocolate glaze over it.
10. Decorate at random, for example, with a dozen berries and a pinch of coconut flakes of contrasting color.
11. Divide the delicious “brick” into wide slices and serve with tea, coffee or other drinks.
