Almond cheesecake with raspberries

I suggest making almond and raspberry cheesecake. It is prepared without adding butter or flour.

The result is an unusually tender and aromatic dessert. This cheesecake can be prepared with other berries, both frozen and fresh.

Ингредиенты

Egg – 3 pcs.

Sugar – 80 g

Vanilla sugar – 1 tsp.

Ricotta – 250 g

Raspberries – 200 g

Almonds – 130 g

Salt – 1 pinch

Crushed pistachios – 1 tsp.

Vegetable oil – 1 tsp.

Рецепт

1. Beat egg yolks with vanilla and regular sugar using a mixer.

2. Grind almonds in a coffee grinder. I add ground almonds and ricotta to the beaten yolks.

3. Beat the mixture again with a mixer until smooth.

4. Beat the whites with a pinch of salt into a stable foam.

5. Add the whipped whites one spoon at a time to the yolk mass, gently mix with a spatula from top to bottom.

6. Place some dough into ceramic molds greased with vegetable oil and sprinkle with raspberries (I use about half of the raspberries).

7. Place the dough into the molds again and sprinkle with raspberries and pistachios.

8. I bake the cheesecake in an oven preheated to 180 degrees for about 25-30 minutes until golden brown.

9. Let the dessert cool.

10. Almond and raspberry cheesecake is ready!
