For filling:
Carrots – 1 pc.
Tomato - 1 pc.
Radish - a handful
Other vegetables - to taste

Garlic – 1-2 cloves

1. Prepare the ingredients. The basis of the rolls is cucumbers and spicy avocado sauce. The filling can be any vegetables and herbs - both fresh and pickled.
2. Add the pulp of one avocado, basil, mint, parsley or other fresh herbs to taste into the blender bowl. Add 2-3 stalks of green onions or 1 small salad or onion, lemon juice, sesame seeds, salt and ground black pepper. If desired, also add additional garlic and a little grated ginger root. Grind until smooth. Taste and add seasonings and spices to taste if necessary.
3. Cut the vegetables for the filling into thin long slices.
4. Using a grater or potato peeler, cut the cucumbers into thin strips.
5. When all the components are ready, you can start assembling the rolls. Apply a layer of sauce to the cucumber strips and add slices of vegetables, a few green onions and fresh herbs.
6. Roll the cucumber strip and secure with a skewer.
7. Repeat with remaining filling and cucumber strips.
8. Vegetable rolls with cucumber and avocado are ready. You can serve.
