Gnocchi belongs to Italian cuisine and is pieces of dough cooked in broth or water. In addition to potatoes, ricotta, spinach, cheese, semolina and bread crumbs can be added to the dough.

Relatives of gnocchi are Ukrainian dumplings and Belarusian dumplings. By the way, potatoes can also be used for dumplings. They are molded, dried and boiled, served with sour cream and butter. Or they can add it to soup. Dumplings are cooked with lard (hidden inside), and milk is often added to the dough itself - the dumplings turn out tender and juicy. All these varieties are united by ease of preparation, as well as budget. In addition, there is no single recipe; all ingredients are added according to desire and sensations.

Ингредиенты

Potatoes - 5 pcs.

Chicken - 350 g

Onion - 1 pc.

Carrots - 1 pc.

Oil for frying - 15 ml

Chicken egg - 1 pc.

Salt - to taste

Wheat flour - 80 g

Spices - to taste

1. Place chilled or defrosted chicken in a saucepan. Pour in water and cook over low heat for 20 minutes after the water boils. Cover the pan with a lid.

2. To fry, finely chop the onion and grate the carrots on a fine grater.

3. Potatoes (3 pcs.) Cut into small pieces. After 20-25 minutes of cooking the broth, place the vegetable in the pan.

4. Fry the onions and carrots in vegetable oil for 5 minutes, stirring with a spatula. Then transfer to a saucepan.

5. Boil the remaining two potatoes until soft, mash them with a fork in a deep bowl.

6. Beat a chicken egg into a bowl with potatoes, add a pinch of salt.

7. Add almost all the flour. The amount of flour may vary, depending on the juiciness (or dryness) of the potatoes, as well as the size of the egg. Start stirring.

8. Add flour until you get a soft, almost non-stick dough.

9. Sprinkle your work surface with flour. Separate a portion from the main piece of dough, roll it into a rope and cut off small pieces. Remember that the gnocchi will expand in size as it cooks. Very small gnocchi are called gnocchetti.

10. Use a fork to score the gnocchi. This is a classic look. The purpose of the grooves is to retain the sauce with which the gnocchi is served. Well, in soup they will look more appetizing.

11. Place the pieces of dough into the pan with the soup, cook for 3-4 minutes, then turn off the gas and let the soup brew under the lid for another 15 minutes.

12. Serve the flavorful chicken gnocchi soup hot with fresh herbs.
