Festive recipe for unsweetened snack eclairs with canned saury and quail eggs.

Homemade eclairs stuffed with savory filling are an appetizer for the holiday table. I propose to surprise your guests with delicious custard “cakes” with canned saury.

At first glance, it may seem that the recipe is quite complicated. I want to reassure novice housewives! Choux pastry for eclairs is prepared very quickly. Eclairs are also baked quickly. They are a pleasure to deal with in every way: baking, stuffing and eating. Give it a try.

For the test:

Milk - 1/2 cup

Water - 1/2 cup

Butter - 100 g

Wheat flour - 1 cup

Chicken eggs - 3-4 pcs.

Salt - 1/2 tsp.

For filling:

Canned saury - 1 can

Green onion - 15 g

Quail eggs (boiled) - 5 pcs.

Mayonnaise - 1 tbsp.

Garlic - to taste

Fresh dill - for decoration

Salt - to taste

1. Milk must first be diluted with water. Pour milk into a small saucepan. Bring to a boil. Add butter. Boil the butter and milk for 10 seconds.

2. During the boiling process, milk must be salted. Add flour to the boiling liquid.

3. Remove the pan from the stove. Quickly knead the dough. Choux pastry for eclairs has a characteristic buttery aroma and special plasticity.

4. Transfer the dough to a cold bowl. We begin to introduce chicken eggs - strictly one at a time. Mix the eggs with the custard mixture by hand.

5. The finished choux pastry has a very sticky base. Don’t let this moment scare housewives, because the cooking process is going just right.

6. The dough is ready. Take a baking sheet. Cover with baking paper. Place the dough in a regular cellophane bag. Cut off a corner on the bag. The dough should fit into the hole easily. We plant elongated flat tubes on paper.

7. Decorate the surface with a fork. Place the eclairs in the preheated oven for 20-25 minutes. Baking temperature - 220°C. Let the eclairs cool and we have time to make the filling.

8. Canned saury must be mashed with a fork, having first removed the central bone.

9. Add chopped green onions, grated garlic and mayonnaise to the canned food.

10. Mix everything. We made a delicious appetizer salad made from saury.

11. Remove the cooled eclairs from the baking sheet.

12. Using a knife, cut lengthwise. Place canned saury salad in the middle.

13. A slice of quail egg and a sprig of fresh dill go here with the salad. Cover the doors.

14. If desired, you can place a cranberry next to the egg - for sourness and decoration.

15. Snack eclairs stuffed with saury are ready! The appetizer can be served immediately or chilled.
