A very tasty recipe for boiled mackerel.
I really love boiled fish, because it is not only tasty, it is also very healthy. During the Danube herring season, I often boil this delicious fish and serve it with a variety of sauces and vegetables. At any time of the year, you can always cook the fish that you most often see on sale. So, in my region, the most commonly available type of fish on sale is frozen mackerel, which is what we will prepare today.
We will prepare the ingredients for cooking mackerel in onion skins and tea according to the list. The fish must first be defrosted.

Mackerel - 1 pc.
Onion peel - 2 handfuls
Tea - 1 tsp.
Bay leaf - 1 pc.
Salt - 1 tbsp.
Sugar - 1 tsp.
Peppercorns - 6 pcs.
Lemon - 20 g
Water - 1.5 l

1. Rinse the onion peels under running water, preferably in a colander. Place the husks in a cauldron or saucepan, add tea, add water, and let the water boil. After boiling, cook everything for about 10 minutes.
2. After a while, add all the spices, squeeze the juice out of a slice of lemon, and add it to the broth. Add salt and sugar and cook for another minute.
3. At this time, gut the mackerel, remove all the entrails and gills.
4. Pull back the husks a little, place the fish in the pan, and cook for exactly 5 minutes. After a while, remove the pan from the stove and leave the fish in it for another 3-5 minutes. Many sources say that fish according to this recipe needs to be cooked for 3 minutes. Honestly, with all my love for sushi and sashimi, I still cannot eat undercooked fish. I tried it many times, the inside of the meat remains not only pink, but near the ridge it is raw. The second point is the skin. When placing the whole mackerel into boiling(!) water, you need to be prepared for the fact that your fish will have nothing left of it. Unless you cook it from the moment the water begins to boil, it’s not a fact that it will remain. Don’t be fooled by the beautiful pictures with golden, smooth skin - this is a completely different recipe, in which the fish is salted in the same, but cold, brine, sometimes even strained from the husks.
5. Serve the fish hot with a few slices of lemon and your favorite sauces. Also delicious with mashed potatoes and boiled rice. The remaining skin can be removed before serving for a more complete image on the plate, and at the same time all fins - spines on the back and belly - can be removed.
