This dish belongs to English cuisine. I suggest you try to cook potatoes this way for the holiday table.
Have you decided what side dish you will prepare for the New Year's table? I want to invite you to cook potatoes the way they are cooked in England for some special occasions. The dish is called ducal potatoes. I have cooked potatoes this way more than once, and absolutely everyone always likes them, and the children are simply delighted with them, they look like cakes or cookies
What I also like about these potatoes is that they keep their shape perfectly if you reheat them, for example, the next day. Such a beautiful side dish will go well with absolutely any meat or fish dish, and it will be very useful on a holiday table.
For ducal potatoes, we will prepare the potatoes themselves, as well as butter, eggs, salt and nutmeg. From the specified amount of potatoes I got 15 beautiful rosettes. To make the same ones, you will need pastry equipment - a thick pastry bag for cream and a large “closed star” nozzle. The size of my nozzle is 12 mm.
Ингредиенты
Potatoes - 400 g
Chicken egg - 1 pc.
Chicken egg yolk - 1 pc.
Butter - 40 g
Salt - to taste
Nutmeg - on the tip of a knife
Рецепт
1. Peel the potatoes, add water and set to cook on the fire.
2. While the potatoes are cooking, combine the egg and yolk, as well as nutmeg and a little salt.
3. When the potatoes are cooked, completely drain the water and add butter. Leave just a little oil to lubricate the finished rosettes.
4. Pound the potatoes with a masher and add the egg mixture. Do not use eggs that are too large (such as choice eggs), eggs of the first category are best. Quickly mix everything until smooth.
5. Immediately cover the baking sheet with parchment and grease it with vegetable oil.
6. Transfer the hot potato mixture into a pastry bag.
7. Then we immediately place the potato mass on the parchment with such rosettes.
8. It turned out to be 15 rosettes; in my haste, I slightly miscalculated the distance between them, but this is not a problem, since their size does not change during the baking process.
9. Place the baking sheet in the preheated oven and bake until beautifully golden brown. Our original product is ready-made, so the main thing here is the appearance of a beautiful appearance. This takes approximately 25 minutes.
10. Melt the remaining butter and, using a pastry brush, brush the finished potatoes duke-style.
11. Remove our potato rosettes from the parchment and transfer to a dish.
12. A beautiful side dish for the holiday table is ready. Duke-style potatoes are suitable not only for the New Year's table, but also for any other holiday.
