Potato zrazy are mashed potato pies with various fillings, fried in a small amount of vegetable oil until golden brown.

The most popular zrazy in our family are stuffed with stewed cabbage, meat and mushrooms. Today I want to share my recipe for potato zrazas stuffed with stewed cabbage.

Ингредиенты

Large potatoes - 8 pcs.

Cabbage - 500 g

Carrots - 1 pc.

Onions - 1 pc.

Vegetable oil - 5 tbsp.

Milk - 100 g

Flour - 3 tbsp.

Egg - 1 pc.

Salt - to taste

Pepper, h.m. - taste

Cucumber brine - 100 g

1. To prepare potato zrazas with cabbage, you first need to stew the cabbage and prepare thick mashed potatoes. So, wash and peel the vegetables. Cut the onion into half rings, grate the carrots on a coarse grater.

2. Lightly fry onions and carrots in 2 tbsp. vegetable oil.

3. Add shredded cabbage. When the cabbage begins to turn golden, add a little water so that it does not burn, but simmers. Cover with a lid and simmer over low heat until done.

4. When the cabbage is almost ready, add cucumber or tomato brine to taste; if there is no brine, add vinegar to taste. Simmer for another 5 minutes. Salt, pepper, add a little sugar for taste. Turn off the stove and cool the cabbage.

5. While the cabbage is stewing, peel, chop and boil the potatoes until tender. From personal observations, I will say that pink varieties of potatoes are best suited for potato zrazas.

6. Add a little milk, prepare thick puree, cool slightly.

7. Add flour and egg, mix.

8. Sprinkle a cutting board with flour, form the mashed potatoes into flat cakes, and place them on the board. Place a heaping tablespoon of stewed cabbage in the middle of each flatbread, pinch the edges, giving them the shape of cutlets. This quantity of products yields 8 large potato zrazas.

9. Fry potato zrazy with cabbage over medium heat on both sides until golden brown. Add vegetable oil 0.5-1 tbsp.

10. Serve as a separate dish with sour cream or as a side dish for meat dishes.
