How much I love making royal cheesecake.
No matter how you cook it, it always turns out very well! Today I propose to bake this cheesecake with lemon zest. How tasty and aromatic it is! I advise you to take a larger lemon so that there is more zest. This time I couldn’t wait until the cheesecake cooled completely. My son came to visit, and I just took the cheesecake out of the oven, and, of course, immediately put it on the table. Freshly baked, it doesn’t hold its shape as well, but it’s still very tasty. Be sure to take note of the recipe!

Dough:
Flour - 240 g
Butter - 160 g
Sugar - 100 g
Salt - 0.5 tsp.
Soda - 0.5 tsp.
Filling:
Cottage cheese 9% - 500 g
Lemon - 1 pc.
Sugar - 100 g
Vanilla sugar - 8-10 g
Eggs - 3 pcs.

1. Sift flour and soda into a deep bowl, add salt and cold butter, cut into cubes. Add sugar.
2. Rub the mixture into crumbs with your hands. While the filling is prepared, the crumbs can be placed in the refrigerator.
3. In another bowl, mix cottage cheese, sugar, vanilla sugar and eggs.
4. Using a blender, mix the curd mass. Wash the lemon well and scald with boiling water. Use a special tool to remove the lemon zest. You can grate the lemon, being careful not to touch the white layer under the zest. Add zest to curd filling.
5. Cover the bottom of the mold with parchment, lay out half the shortbread crumbs, then the curd filling, smooth out.
6. Next, add the remaining crumbs and level the surface.
7. Preheat the oven to 180 degrees and bake the royal cheesecake with cottage cheese and lemon for 45 minutes. The top of the cheesecake should be browned.
8. Cool the cheesecake in the mold, then carefully remove and cut into pieces. To cut it very beautifully, it is better to let the cheesecake stand in the refrigerator for a couple of hours after cooling.
