Spice mixture for Fergana pilaf

There are a huge number of varieties of pilaf, but the classic of Central Asian cuisine is Fergana pilaf, which is prepared exclusively from rice called “devzira” (dev-zira), which grows only in the Fergana Valley.
Fergana pilaf is very tasty and rich, but despite this, it contains only a small set of certain spices, the main part of which are cumin, coriander grains, barberries, red pepper and saffron. Sometimes expensive saffron is replaced with more affordable turmeric and, if desired, added, for example, dried basil. As a rule, Fergana pilaf is limited to this set of spices, but you can prepare a spicy mixture for it for future use.
To do this, prepare the products according to the list.
Ингредиенты
Zira - 2 tbsp.
Coriander grains - 2 tbsp.
Dried hot pepper (without seeds) - 1 pc.
Barberry - 3 tbsp.
Saffron - 1/2 tsp.
Fine sea salt - 2 tbsp.
Рецепт
1. Mix barberry berries and cumin seeds in a bowl.
2. In a mortar, grind the coriander grains along with red pepper and saffron.
3. Mix all the spices together. You can stop at this stage, but you can also add a couple of tablespoons of fine salt.
4. The spice mixture for Fergana pilaf is ready! Store it in a closed jar and use it for its intended purpose.
