Pumpkin marshmallow has a pronounced pumpkin taste, so it will delight those who love and revere this product. However, no one bothers to “correct” the recipe for making pumpkin marshmallow at home by adding lemon or orange zest, some apples to the pumpkin puree, simmering it together with the pumpkin, thoroughly seasoning the finished puree with aromatic spices (cinnamon, cardamom, vanilla, nutmeg, ground ginger ). Thus, the pumpkin flavor of the finished marshmallow will be elegantly complemented and decorated.
But first, you still need to prepare pumpkin puree. The required amount of pumpkin must be cleaned by cutting off the tough skin and removing the inside with seeds.

Pumpkin - 250 g
Water - 100 ml
Sugar and spices - to taste

1. The pulp itself must be cut into pieces approximately equal in volume.
2. Place the pumpkin in a saucepan, add a little water and put it on the fire. When the water boils, reduce the intensity to low and simmer the pumpkin until soft. Alternatively, the pumpkin can be baked, boiled, cooked in a double boiler... The main thing is that it becomes soft.
3. Grind the soft, tender pumpkin into a smooth puree using a blender.
4. Add spices to taste, and if the pumpkin is unsweetened, you can add a little sugar or honey. Place the finished puree on a sheet of parchment in an even layer.
5. Dry the pumpkin puree in the oven at 50 degrees until the desired degree of softness.
6. Cut the finished pumpkin marshmallow into small pieces.
