Prepare the necessary ingredients. Peel all the vegetables: potatoes, carrots and onions, cut the stem celery from the bunch, sort the spinach and cut off the stems, cut off the tails of the zucchini. Rinse all preparations in water.

3. Cut the onions into the same cubes, pour into a container, add bay leaves and warm water. Place the pan on the stove, bring the contents to a boil and simmer over medium heat for about 10 minutes.
4. Cut the washed spinach leaves into ribbons and add to the container. Don’t worry about the thickness, the spinach mixture will reduce in size by about three times!
5. Cook the soup until done, adding salt and ground black pepper to taste. Be sure to taste the soup before serving. At this stage, you can add other seasonings of your choice to it: chicken, mushroom, vegetable, etc.
6. Pour vegetable soup with celery and spinach into deep bowls. Serve steaming, sprinkled with fresh herbs.
