The secret of this texture is in the baking soda dissolved in vinegar/lemon juice and the sequence in which the ingredients are added.
Let's prepare the ingredients according to the list: wheat flour, soda, vinegar, margarine, sour cream of any fat content, sugar, plum jam and dried apricots.

Margarine - 200 g
Sour cream - 200 g
Soda - 1/2 tsp.

1. Melt the margarine and cool for 3-4 minutes, mix with sour cream and immediately add the foamy mixture (soda slaked with vinegar or lemon juice). Mix quickly.
2. Add wheat flour in parts - the norm may vary, be guided as you knead.
3. The dough for bagels on margarine, which melt in your mouth, should be soft, pliable, and do not require rest.
4. For convenient molding, divide the large lump into six equal parts. Roll each into a round cake with a diameter of about 20 cm. Cut into eight segments, running a knife through the center of the circle. From the side of the base of the triangle, lay out the filling, roll it up, moving towards the sharp corner. As a result - 48 semi-finished bagels.
5. Dip in granulated sugar and transfer to a baking sheet lined with parchment. Bake in a preheated oven at 180 degrees for about 20-25 minutes.
