Moroccan-style salted lemons

Salted lemons are a very popular snack in Middle Eastern countries.
It can be served as an independent snack with strong alcoholic drinks, especially with tequila. Often, salted lemons are served with meat or stewed with it, added to salads, and baked poultry turns out very tasty with them. I like to add the juice released during pickling of lemons as a salad dressing - just add olive oil and mix. I also love it in marinades for meat and poultry. The chicken in it turns out incomparable, just like the duck cooked in this marinade.
To prepare Moroccan-style salted lemons, take the ingredients from the list. Wash the lemons well under running water.

Lemons - 8-10 pcs.
Sea salt - 2 tsp. for 1 lemon
Coriander seeds - 1 tsp.
Fennel seeds - 2 tsp.
Pepper mixture - 0.5 tsp.

1. Combine fennel seeds, coriander seeds and a mixture of peppers, lightly grind them in a mortar.
2. Mix spices with salt.
3. Cut the lemons lengthwise into a cross.
4. Pour salt and spices into the cuts at the rate of 2 tsp. for one lemon.
5. Place the lemons tightly in the jar and press them down lightly.
6. Leave for 5-6 hours. During this time, the lemons will become softer and release juice. Press the lemons in the jar down further and add a few more. Leave for a few more hours.
7. Fill the jar to the top with lemons and press them down as well. After a few more hours, so much juice will be released that the lemons will be covered to the top, right up to the lid. Place the lemons in a cool, dark place and leave to marinate for at least a month, although after two weeks you can take a sample. The lemon peel will become soft and transparent, with a very unusual taste. Well, if you love tequila, there’s nothing to say - both lemon and salt in one snack.
8. Salted lemons can be stored for quite a long time, the main thing is that they must be completely covered with the juice that has released. Add them to salads, serve with meat or stew with it, in general, enjoy!
