Knuckle roll for Christmas

The holidays are inexorably approaching, and there is absolutely no time. I want to cook something tasty and homemade.
This is a recipe for a homemade cold snack that goes perfectly with strong drinks. A piece of roll is also great for a hearty and quick snack. It’s great that everything in it is natural and there are no chemicals. This is not sausage from the store, but something completely different and healthy. To save time, I will cook the shank in a pressure cooker. When cooking on the stove, you will need to cook the shank for 4 hours, but I can do it in an hour.
So, let's prepare a shank, a turkey shoulder and a piece of pork pulp. Spices, salt and onions.

Pork knuckle - 1 pc.
Turkey shoulder - 1 pc.
Pork without bone (shoulder) - 400 g
Garlic - 1 head
Black peppercorns and ground - to taste
Allspice - 5 pcs.
Bay leaf - 4 pcs.
Salt - to taste
Onions - 1 pc.
Nutmeg - to taste

1. Wash and scrape the knuckle. Place all the meat in the bowl of the multicooker-pressure cooker. Add the peeled onion, salt, bay leaf, allspice, and black peppercorns. pour water so that everything is covered with water. Close the lid. Close the pressure relief valve. We set the time to 59 minutes in the pressure cooker operating mode, in the “Jellied” menu... and while everything is cooking there, we mind our own business.
2. Peel the garlic.
3. Finely chop with a knife.
4. When the ready signal sounds, release the pressure in the multicooker and place the meat on a plate to cool. The meat was cooked perfectly and the bone fell off the shank on its own.
5. Place the boneless shank on a double layer of sterile gauze, skin to gauze. Sprinkle with garlic, black pepper and grate in nutmeg. Place the turkey meat and a piece of boneless pork. Wrap everything in a roll, tightening it tightly with gauze.
6. Place the roll in a tray, put pressure on top and put it in the cold overnight.
7. In the morning, remove the gauze and take out the roll.
8. Cut into rings and serve with horseradish, mustard and even (what a nightmare!) ketchup.
9. And if you serve it to the table as an appetizer, and with a glass... real gourmets will appreciate it!
