Whole rabbit baked in the oven according to this recipe is a beautiful and tasty dish for formal serving.
It looks very impressive if you serve it exactly in the form in which the rabbit was baked in the oven. Although, to be honest, after slicing, the rabbit, which was sliced while still raw, looks more aesthetically pleasing. But the first impression, you know, is always more powerful from a large whole piece of meat. This is exactly what this recipe is aimed at - to impress and show that it is “for a reason.” Of the two hours it takes to prepare the dish, the housewife spends less than half an hour: this is time to cut the potatoes and add the bacon.
By the way, a fun fact: if in Russia there is a “herring under a fur coat,” then in German what I will do now is called “a rabbit in a coat of bacon.” Referring to his bacon coat.

Rabbit - 1 pc.
Bacon - 350 g
Potatoes - 2 kg
Vegetable oil - 100 ml
Coarse salt - 1 tbsp.

1. The ingredients for cooking a rabbit in the oven are as follows: 1 rabbit, 350 gr. thinly sliced bacon or salted bacon (or maybe more or less - it depends on the size of the rabbit and the thickness of the bacon), 2-3 kg of potatoes (as much as will fit on a baking sheet in the oven in one layer), 100 ml of vegetable oil, coarse salt to taste, rosemary or something green, but not raw parsley - to taste.
2. Peel the potatoes and cut them if necessary. I mean, there is no need to cut small potatoes, medium ones - into halves, large ones - into quarters. We cut at least one potato so that it does not stick out, but lies, i.e. so that the rabbit can be placed on it so that it does not touch the baking sheet. Mix the potatoes thoroughly with vegetable oil, salt and seasonings.
3. You can set the oven to heat up to a temperature of 200 C. Our rabbit is sold in special trays. So, if you have such a tray, then you should line it with lard “overlapping”. If there is no tray, then first you need to wrap the limbs, which I do in the next step.
4. Place the rabbit on its back, wrap the paws with strips of bacon, and also line the inner cavity with bacon.
5. After this, all I have to do is wrap the rabbit in the edges of the bacon lying on the edges of the tray. Without a tray, it is more convenient to turn the rabbit, which is not yet covered with anything, onto its stomach, and then lay it out with bacon, overlapping it from the back, immediately squeezing the strips under the sides.
6. The rabbit is laid out on top of the potatoes with its back facing up. Beautiful? Carefully?
7. Bake the whole rabbit in the oven at a temperature of 200 degrees. at the average level an hour. After about half an hour, you can stir the potatoes, DO NOT TURN the rabbit. After the main baking time, let the rabbit and potatoes lie for another half hour in a closed, but no longer working oven. This benefits both of them, but especially the potatoes! Before serving, you will definitely need to stir it around the liquid that has come out of the rabbit and bacon!
