As soon as I thought about how to prepare a fish appetizer that would be nourishing, juicy and tasty at the same time, for some reason a recipe for fried fish with carrot and onion marinade immediately came to mind. In my childhood, this dish was prepared often. Our neighbor, Aunt Marina, loved mackerel with marinade, and my mother cooked it very tasty.
Mommy has been gone for a long time, but all her recipes are preserved in a notebook. The recipe for mackerel marinated with carrots and onions is somehow different from everyone else and is emphasized with a wavy line. Let's repeat it and find out what's so special about it. The recipe contains two short cooking steps: frying the fish and marinating the vegetables.

Fresh frozen mackerel – 2 pcs.
Wheat flour – 100 g
Vegetable oil - for frying
Parsley - for serving
For the vegetable marinade:
Onion (large) – 1 head
Carrots – 2 pcs.
Tomato sauce (thick) – 100 g
Vinegar 70% - 1 tsp.
Mixed peppers - to taste
Bay leaf – 1 pc.
Water – 1 glass
Salt – 1 tsp.
Sugar – 1 tbsp.
Рецепт
1. Defrost mackerel in a cool place. We clean, rinse inside, remove tails and heads. Cut into steaks 3-4 cm wide.
2. Salt and roll in flour. Fry on all sides in a hot frying pan in vegetable oil.
3. Place the fish in a container.
4. Chop the onion into strips. Fry in oil until light golden.
5. Carrots need to be cut into thin cubes or grated on a coarse grater. Add carrots to onions and fry.
6. Add tomato sauce, salt, sugar, a mixture of peppers, bay leaf and vinegar diluted with water to the vegetables. Bring the marinade with vegetables to a boil.
7. Pour hot marinade over the fried fish. Let's soak. Mackerel marinated with carrots and onions is ready!
8. Serve as an independent snack or with a side dish for dinner.
