Solyanka is an old Russian hot soup dish. What kind of products is it made from?
To prepare fish solyanka, be sure to take a strong fish broth made from the remains of fish after cutting, and cucumber or cabbage brine. The fish should be larger and not very bony.
Vegetables include onions, tomatoes, pickles, and capers, olives, and lemon are also used as additives. When serving, season the soup with sour cream and sprinkle with herbs.
To prepare the fish solyanka “Traktirnaya” we will prepare the products according to the list.

Fresh fish (fillet) – 500 g
Fish broth – 1 l
Cucumber brine – 500 ml
Pickled cucumbers – 100 g
Onions – 1 pc.
Refined sunflower oil – 2 tbsp.
Tomato paste – 1–2 tbsp.
Lemon – 0.5 pcs.
Bay leaf – 1 pc.
Black peppercorns – 5 pcs.
Parsley (greens) – 1 bunch
Sour cream – 4 tbsp.
Salt - to taste
Рецепт
1. Peel the cucumbers, cut lengthwise into four parts and cut crosswise into thin slices.
2. Pour a little water over the cucumbers and simmer until soft.
3. Cut the fish fillet into small cubes.
4. Peel the onion, cut in half and chop each half into thin half rings.
5. Fry the onion in oil until lightly browned.
6. Add tomato paste to the onion.
7. Heat the onion and pasta over low heat for 5 minutes.
8. Place stewed pickled cucumbers, onions with tomatoes, peppers and bay leaves in a saucepan, pour in hot, strained broth and cucumber brine.
9. Cook for 10 minutes.
10. Place the fish.
11. Cook over low heat until the fish is cooked (about 10 minutes).
12. Fish solyanka “Tavern” is ready. When serving, place slices of peeled lemon into plates, sprinkle with chopped herbs and season with sour cream.
