Wheat-rye malt bread

Delicious and aromatic bread made from wheat and rye flour with malt.
Today I come to you again with a recipe for bread - wheat-rye with malt. This is one of my favorite rye bread recipes. Try it too. For cooking, we will prepare the products according to the list.
Ингредиенты
Dry yeast - 4 g
Salt - 1 tsp. with a slide
Sugar - 1 tsp.
Honey - 1 tbsp. l.
Water - 250 ml
Wheat flour - 220 g
Rye flour - 130 g
Fermented rye malt - 1 tsp.
Butter - 10 g
Рецепт
1. Mix both types of flour, salt, sugar, yeast, malt.
2. Heat the water, add honey and stir well.
3. Pour honey water into the flour mixture, add soft butter.
4. Knead the dough, which is quite tight and slightly sticks to your hands. It will resemble plasticine, but at the same time it is very pliable. Immediately, without preliminary proofing, we form a loaf and place it on a baking sheet covered with parchment. Cover with a towel and leave in a warm place for 1 hour.
5. During this time, the loaf will increase significantly in size. This is how chubby it turns out. Lightly sprinkle it with flour and use a sharp knife or blade to make cuts. Bake in an oven preheated to 200 degrees for the first 10 minutes with steam, then without steam for another 30-40 minutes. Be guided by your oven. When you tap the finished bread, you will hear a dull sound. We make steam like this: pour water into a bowl and place it on the bottom of the oven, or simply put 10-12 large ice cubes on the bottom of the oven. I've been using the second tip lately - I don't have to remove a bowl of boiling water from a hot oven.
6. Wheat-rye malt bread is ready. Immediately remove from pan and cool completely on a wire rack.
