I offer a simple but very tasty recipe for pickled cucumbers for the winter.

If you add arugula leaves to the jar, you will end up with an incredibly piquant taste in the finished cucumbers. The recipe is reliable - cucumbers are stored well and for a long time (up to a year), but it is important to maintain all recommended sterilization conditions for both the seaming utensils and the preparation itself.

Let's prepare the necessary ingredients for preparing pickled cucumbers with arugula for the winter. Wash the cucumbers, rinse the arugula in running water, peel and wash the garlic.

We wash the jars and lids very thoroughly with soda and immediately send them for sterilization. Sterilize using your favorite method; I like to sterilize jars in the oven at 100 degrees; I keep liter jars in the oven for 15 minutes. It is best to boil the lids for 10 minutes in a saucepan on the stove.

Cucumbers - 1 kg

Arugula - 50 g

Garlic - 4 cloves

Black peppercorns - 10 pcs.

Marinade:

Water - 1 l

Sugar - 3 tbsp.

Salt - 1 tbsp.

Vinegar 9% - 80 ml

1. Cut off the ends of each cucumber on both sides.

2. Place half of the entire arugula on the bottom of the sterilized jars, distributing evenly between the glass containers. We will also evenly distribute the garlic into the jars (finely chop it directly into the jar) and peppercorns.

3. Then place the cucumbers tightly in each jar, and place the rest of the arugula on top, distributing evenly among the jars.

4. Prepare the marinade. Pour water into a pan, put it on the stove, turn on maximum heat, add salt, sugar, wait until it boils, add vinegar, remove the pan with the prepared marinade from the stove.

5. Pour the marinade into jars with cucumbers, trying not to pour it on the glass so that the jar does not burst from the high temperature, cover with lids.

6. Place a kitchen towel on the bottom of a large pan and place a jar or jars (if the size of the pan allows) with cucumbers on it, pour in the maximum possible amount of water - ideally, the water should reach the shoulders of the jar. Turn on medium heat and wait for the water in the pan to boil, after which we will sterilize the jars of cucumbers for 15 minutes.

7. Take the jars out of the pan and immediately close the lids tightly. I have screw caps, so I just screw them on by hand. Turn the hot jars upside down, cover them with a blanket and leave them to cool slowly overnight. Pickled cucumbers with arugula are ready for the winter. In the morning we will send the workpiece for long-term storage (up to a year) in a cool pantry. Happy canning!
