I would like to offer a very elegant dish - baked mashed potatoes with cheese.
Puree in this form is always popular both at the holiday table and just at family dinners. The children are simply delighted with him!
In French cuisine this dish is called "Duchesse potatoes", but I simply call it "baked mashed potatoes with roses". It’s very easy to do, but the result is magical!

Potatoes - 600 g
Egg - 1 pc.
Hard cheese - 80 g
Salt - 1/2 tsp.

1. To make oven baked mashed potatoes, you will need all the ingredients in the photo. Take a hard cheese like Parmesan or Gruyère, but at worst, “Russian” will do. It is better to take potatoes that are not too crumbly so that they hold their shape well.
2. Peel the potatoes, cut into pieces, cover with water and cook until tender without salt. The potatoes should be cooked very well, even slightly overcooked. That is, cook it 10 minutes longer than if you were boiling it for a side dish.
3. Grate the cheese on a fine grater.
4. Drain the water from the finished potatoes, mash them well and very thoroughly with a masher until dry, that is, without adding any liquid. Try to avoid any lumps.
5. Beat a raw egg here, add grated cheese, salt and nutmeg.
6. Mash everything thoroughly with a masher or whisk until completely homogeneous. For a more delicate texture, you can rub the mass through a sieve. Let the mashed potatoes cool slightly to avoid burning your hands.
7. Place the mashed potatoes in a pastry bag with a star tip and pipe small roses about 5-6 cm in diameter onto a baking sheet. Pre-cover the baking sheet with siliconized parchment or a baking mat.

9. Meanwhile, your oven should already be preheated to 200°C. Place the baking tray with the rosettes in the oven and bake the mashed potatoes for about 15-20 minutes until beautifully golden brown.
10. This is such a charm! Even those who don’t eat mashed potatoes will never refuse a couple of these roses. Serve piping hot!
11. Can be served as an independent dish with vegetable salad or as a side dish for any meat and fish dishes.
