Onion rings in batter are a tempting and incredibly tasty appetizer. Moreover, it is very simple and easy to prepare.

Wrapped in a fluffy coat of batter, onion rings are fried until golden brown and crispy. In just a few minutes, you get a seductive contrast of a pleasantly crunchy golden crust and tender juicy onion pulp. A simple but incredibly tasty combination!

If they tell you that this dish has many subtleties and cooking secrets, don’t believe it! There is only one secret - the right batter! And I want to share the recipe for such a proper thick batter with you today. At the same time, I’ll tell you how to prepare another spectacular and tasty version of an onion snack - let’s prepare the famous “onion flower”. Shall we begin?!

Onion rings:

Onions – 3-5 pcs. (large)

Kefir – as needed (0.5-1 l)

Salt - to taste

Ground black pepper - to taste

Flour for breading - as needed

Breadcrumbs - optional

Vegetable oil - for frying (as needed)

Batter:

Wheat flour – 1 cup

Corn starch – 0.5 cup

Red pepper - to taste

Paprika – 1 tsp.

Oregano – 0.5 tsp.

Dried garlic – 0.5 tsp.

Chicken egg – 1 pc.

Milk – 180 ml

Salt - to taste

"Onion flower":

Onions - 3-5 pcs. (large)

Chicken egg – 2 pcs.

Milk – 250-300 ml (1 glass)

Wheat flour – 1-1.5 cups

Cayenne pepper – 0.5 tsp.

Paprika – 1 tsp.

Oregano – 0.5 tsp.

Garlic powder – 0.5 tsp.

Salt, pepper - to taste

Vegetable oil - for frying

1. Peel the onions and cut into rings about 0.5 centimeters thick. Divide the resulting onion pieces into individual rings.

2. If time allows, place onion rings in a wide container in layers. Pour in enough kefir so that the rings are completely immersed in kefir. Add a few pinches of ground black pepper and salt to taste. Place the rings in the refrigerator for at least 1.5-2 hours, or better yet, overnight. If you don’t have time, you can skip this step, but the pickled rings taste more tender and a little tastier.

3. To prepare the batter: break a chicken egg into a bowl, add milk and beat for a few minutes until a homogeneous mixture is obtained. Then, stirring, gradually add wheat flour, spices and cornstarch. And mix everything thoroughly so that there are no lumps left.

4. In addition to the batter, prepare two more containers - with flour and breadcrumbs (I use homemade Panko). The rings can also be prepared without breadcrumbs - this is at your discretion.

5. Heat the vegetable oil very well. If you have a cooking thermometer, the temperature should be approximately 190 degrees. Alternately dip the onion ring into the flour, batter and breadcrumbs. The batter should be quite thick and cover the ring with a thick layer. If necessary, you can add a little more flour and starch until the desired thickness is achieved.

6. Place the rings in heated vegetable oil and fry for 1-2 minutes on one side. When the rings are browned, turn them over and fry until golden brown on the other side (about another 1-2 minutes). Place the finished onion rings in batter on a paper towel for a few seconds to absorb excess oil, and then serve.

7. Now let’s prepare another popular onion snack option - “onion flower”.

8. To prepare the appetizer, select a large onion. Cut off the top of the head, leaving the bottom intact. Place the onion cut side down and, stepping back a little from the bottom, make 4 cuts, trying to cut through the onion to the core. Cut each resulting quarter of the onion in half, and then repeat the process 1-2 more times - as far as the size of the onion allows. Turn the onion over and carefully separate the resulting petals (see the video version of the recipe for more details).

9. Measure milk into a bowl, add 2 eggs and beat until smooth. Mix flour with spices. Gently roll the onion flower in the flour, making sure all the petals are coated in the flour. Dip the flower into the egg-milk batter, petals facing up. Then turn the petals down, remove from the batter and shake lightly to get rid of any excess liquid.

10. Re-bread the flower in flour. Gently separating the leaves, sprinkle the flower on all sides with flour. Shake off any excess flour and place the flower in the freezer for at least 1 hour, petals facing up.

11. Then carefully, using a spatula or other available tools, dip the frozen flower into the hot vegetable oil, petals down. It is advisable that there be such a quantity of oil that the flower can float in it without touching the bottom of the container.

12. Fry the onion flower for 2-3 minutes on one side, then flip and fry for another 2-3 minutes on the other side, until golden brown. Place the flower on a paper towel for a few seconds to absorb excess oil, then serve.

13. The onion flower is ready!

14. Serve the appetizer hot, with sauce to taste. If desired, both the rings and the flower can be sprinkled with lemon juice. Bon appetit!
