Today I want to share with you a recipe for making delicious homemade chicken breast nuggets.
This simple and easy-to-prepare dish is a real lifesaver in the kitchen - it prepares quickly, has a minimum of ingredients, can be stored in the freezer for weeks, is suitable as lunch, dinner and a light snack, and most importantly - everyone without exception likes it and it always turns out.
We'll keep the classic combination of fried chicken flavors and crispy breading, but we'll change the cooking approach a little. Instead of minced chicken, we use whole pieces of chicken. Let's prepare a delicious French-style breading with the addition of cheese and spices. Let's completely eliminate deep frying and frying in oil, and bake the nuggets in the oven instead. So, instead of classic fast food, we will have a light, healthy, and at the same time incredibly tasty version of chicken nuggets. Try it!

Chicken fillet – 2 pcs. (500 g)
Salt - to taste
Ground black pepper - to taste
Kefir/yogurt – 200-250 ml
Crackers – 180 g
Hard cheese – 100-150 g
Mediterranean herbs - to taste
Paprika - to taste
Vegetable oil - optional

1. Beat the chicken fillet to a thickness of about 1 centimeter (you can use chicken thigh meat instead of chicken breast). Salt and pepper the fillet on both sides, and then cut into portions of the desired size. I cut the fillet into strips 1.5-2 centimeters wide and 6-7 centimeters long.
2. Place the prepared fillet in a deep container, pour kefir or yogurt, stir and leave for 40-60 minutes so that the meat marinates. If time permits, the meat can be marinated for a longer time.
3. Combine crushed crackers and grated cheese. Add spices to taste. I add a mixture of dried Mediterranean herbs and paprika. And also, since my crackers are unsalted and neutral in taste, add 1-2 more pinches of salt and ground black pepper. Mix everything thoroughly.
4. Line a baking dish with baking paper and grease with a thin layer of vegetable oil. To avoid using oil, you can cook the nuggets in a non-stick pan or use oiled baking paper. Dip each piece of chicken breast into the breading and place in the prepared baking dish. At this point, you can freeze some of the nuggets to cook later.
5. Place the prepared nuggets in an oven preheated to 220 degrees and bake for 15 minutes. Bake frozen nuggets in the oven without defrosting, increasing the cooking time to 20 minutes.
6. If desired, chicken breast nuggets can also be cooked in a frying pan, frying for 2-3 minutes on each side until golden brown.
