This savory noodle soup with lamb and vegetables is sure to please your family.

Today we are preparing kesme soup in Kyrgyz style. I must say that I have long realized that many Asian recipes are very similar and overlap with each other in the way they are processed or in the composition of ingredients. Something similar exists in Uzbek cuisine.

Kesme is noodles, and how to prepare it depends on the preferences and hands of the hostess. Like shurpa, kesme comes in two types: kuurma (fried) and kainatma (boiled). Any vegetables and even potatoes can be added to kesme soup, but noodles should be the main ingredient. It can be prepared by hand by kneading the dough from water, flour and salt, or you can purchase it ready-made.

Anyone who has ever tried dishes of this kind will definitely want to try them again or cook them at home themselves. Highly recommend!

In my recipe I use ready-made stretched noodles. We will need all the products on the list.

Ингредиенты

Noodles - 400 g (ready prepared)

Lamb - 350 g

Onions - 1 pc.

Carrots - 1 pc.

Sweet pepper - 1 pc.

Radish - 0.5 pcs.

Tomato paste - 1 tbsp.

Vegetable oil - 3 tbsp.

Green onion - 4 stalks

Garlic - 4 cloves

Coriander - 0.5 tsp.

Hot pepper - 0.5 tsp.

Salt - to taste

Water - to taste

1. You can take lamb on the bone or just the pulp, or both at the same time. Cut the meat into convenient pieces and fry in vegetable oil until golden brown. Often, instead of vegetable oil, fat tail fat is used, it depends on the preferences and strength of your body. After frying, salt the meat.

2. Add onions and fry everything together until the onions are soft.

3. Add tomato paste, spices, stir and fry for another three to four minutes, stirring constantly.

4. You need to prepare the remaining vegetables in advance. Chop bell peppers, radishes and carrots.

5. Pour water or broth over the meat. Boil. If necessary, remove the foam. Cook until the meat is soft.

6. After about 30-40 minutes the lamb becomes very soft and you can add the rest of the vegetables. Cook for about 10 minutes more.

7. Next, put the noodles into the soup and cook until done. Stretched or sliced homemade noodles cook very quickly. Cook store-bought as written on the package.

8. Sprinkle the finished soup with any herbs, in this case green onions, and add chopped garlic. Stir and bring to the desired taste, then turn off the heat.

9. Kyrgyz style kesme soup is ready, serve it immediately.
