Lenten salad with potatoes and mushrooms

A very tasty salad of young potatoes with fried champignons, olives and onions (white and green), which can be an excellent stand-alone dish during Lent.
Moreover, some will find it very difficult to recognize salad in this dish... But this does not affect the taste. Cook with confidence - it will be delicious! Prepare the necessary ingredients for a lean salad with potatoes and mushrooms. If the potatoes are old, then peel them; if they are young, then wash the skins under running water with a hard kitchen sponge. Peel the onions, wash them together with green onions and dill.

Potatoes - 400 g
Champignons - 150 g
Onion - 50 g
Green onion - 3 feathers
Olives - 10 pcs.
Vegetable oil - 1 tbsp.
Olive oil (if available) - 1 tbsp.
Salt and pepper - to taste
Fresh greens - a couple of sprigs

1. Boil young small potatoes whole in slightly salted water for 12-15 minutes, boil old potatoes in their skins until tender, check them with a knife. Drain the water and cool the potatoes.
2. Heat a little lean refined oil in a frying pan, fry the chopped onions and champignons over low heat. This all also needs to be cooled.
3. Place sliced potatoes and mushrooms in a deep bowl.
4. Add olives cut into slices, chopped garlic and dill. Season with salt and pepper to taste, season with olive oil or any lean oil, and stir.
5. Lenten salad with potatoes and mushrooms is ready. Divide into portions and serve immediately.
