Cookies are not only sweet, but also vegetable. When you have leftover mashed potatoes from dinner, don't rush to throw it away. Well, or make it fresh, this is also acceptable for making these cookies. Preparing potato cookies is quick and easy. The cookies are soft on the inside and crispy on the outside. These cookies are well suited for diversifying the menu during Lent. Boil and mash the potatoes, let cool.

Mashed potatoes - 300 g
Vegetable oil - 2 tbsp.
Wheat flour - 100 g
Salt, pepper, spices - to taste

1. Salt, pepper, add spices to taste (I used dried garlic).
2. Mix well.
3. Add butter and flour.
4. Knead the dough. You may need a little more flour. The dough should be soft and should not stick to your hands.
5. Divide the dough into several parts.
6. Roll each part into a flat cake and stack it.
7. Roll out the dough into a layer. Cut out cookies with a cookie cutter.
8. Place the cookies on a baking sheet with a mat or paper. Lightly brush with vegetable oil and sprinkle with herbs (optional).
9. Bake potato cookies at 200 degrees for 12-15 minutes.
