Whey cupcakes

Very tasty, tender muffins with raisins, mixed with whey and butter. Bake in silicone molds in the oven.
To prepare whey-based muffins, prepare the ingredients according to the recipe list.
Ингредиенты
Whey - 1 glass
Chicken egg - 2 pcs.
Sugar - 1 glass
Butter - 100 g
Baking powder - 1 tsp.
Wheat flour - 2.5 cups
Raisins - 80 g

1. Combine chicken eggs with granulated sugar in a deep bowl.
2. Using a mixer, beat the mixture until fluffy and light.
3. Meanwhile, rinse the raisins and cover with hot water, leave for 5-10 minutes to soften them. Then drain the water and dry the raisins by placing them in a single layer on a paper towel.
4. Pour warm whey and melted butter in a water bath (or microwave) into the egg mixture.
5. Add sifted wheat flour and baking powder.
6. Knead a homogeneous dough, similar in consistency to homemade sour cream. At the very end, add the prepared raisins and mix again. Cover the bowl with a kitchen towel and let the dough rest for 10-15 minutes.
7. Then place it in portioned molds (I have silicone ones), filling them to 2/3 of the volume, and place them in an oven preheated to 180 degrees.
8. Bake the cupcakes until beautifully golden brown, about 25-30 minutes, depending on your technique.
9. That’s all, very tasty, tender whey muffins are ready.
10. Let them cool slightly, then remove from the molds and serve.
11. A cup of aromatic tea, coffee or milk is perfect as an addition.
