It's zucchini season. Let's prepare one of the delicious summer dishes - zucchini soufflé, which can serve as a wonderful breakfast or dinner. It turns out light, tender and airy. The soufflé is perfect for those who have to follow a diet for some reason, as well as for those who are watching their figure. The soufflé does not leave a heaviness in the stomach. It can also be offered to children who refuse zucchini, the taste of which is not felt in the soufflé.
To prepare zucchini soufflé, we will need the products indicated in the list.

Zucchini - 2-3 pcs. (0.5 kg)
Chicken egg - 4 pcs.
Hard cheese - 150 g
Cream 20% - 50 ml
Cherry tomatoes - 6 pcs.
Flour - 3 tbsp.
Butter - 20 g
Salt - to taste
Pepper - to taste

1. Grate the zucchini on a fine grater, lightly salt it and set aside for 15 minutes so that they release the juice, which must be carefully squeezed out.
2. Add salt, pepper, cream and flour to the zucchini mass.
3. Grate the cheese on a medium grater. Set aside half the cheese to sprinkle on the soufflé.
4. Add the yolks into the second half of the cheese and mix.
5. Add the egg-cheese mixture to the squash mixture. Mix.
6. Beat the whites to stiff peaks with a pinch of salt.
7. Fold the whites into the zucchini mass, gently from top to bottom, folding them like in a sponge cake.
8. Grease a baking dish with butter. Carefully pour the zucchini mixture into it.
9. Decorate with cherry tomatoes on top and place in the oven for 55 minutes.
10. Remove, sprinkle with remaining cheese and place in the oven for another 5 minutes, until the cheese is completely melted.
11. Zucchini soufflé is ready! We cut it and treat it to family and friends.
