Well, very tasty!

I was interested in the peanut and sweet corn filling, so I chose the thick pancake option for cooking. Rice flour is used for the dough and its properties differ from one manufacturer to another, so the amount of water may vary.

I used available sweet corn - canned. Sugar is added to the filling according to taste, I have no sugar at all and it’s quite tasty - sweet. For Apam balik pancakes, prepare the ingredients according to the list.

Ингредиенты

For the test:

rice flour - 1 cup

water - about 1.5 glasses

sugar - from 1 tbsp.

vanilla sugar - to taste

baking powder - 0.5-1 tsp.

salt - 1 pinch

For filling:

peanuts - 0.5 cups

sweet corn - 0.5 cups

sugar - to taste

Oil - for frying

Рецепт

1. Combine dried peanuts with sweet corn kernels and either crush or chop with a blender, but not into puree, but into small pieces. Sweeten this filling if desired.

2. For the dough, mix rice flour with sugar, salt and baking powder.

3. Pour in water in portions, mixing the ingredients into a homogeneous mass.

4. You should get a thick, fluffy dough, i.e. thicker than for thin pancakes, but thinner than for pancakes. I made enough dough for three servings - that's three pancakes.

5. Grease a heated frying pan with a small bottom diameter with oil (for example, vegetable oil). Pour out a portion of the dough.

6. When bubbles begin to appear on the surface of the dough, add the filling. It is more convenient to do this on half of the pancake, and then cover with the other half.

7. Bake the pancake with filling until the surface is golden brown and serve it whole or cut into pieces.

8. Apam balik pancakes are ready.
