Delicious Malaysian Laksa soup with shrimp can be prepared very easily and quickly using this recipe at home.
Of course, there is a certain set of products that makes this dish Malaysian with Asian notes in taste. This soup will appeal to those who love hearty, flavorful soups with a certain amount of creaminess and spiciness. And if you are a big fan of shrimp, then you definitely should prepare this soup and enjoy the unique taste of Asia. Let's prepare the products according to the list. I didn’t have rice noodles, I replaced them with regular ones, but otherwise I completely followed the classic recipe for making Laksa curry soup.

Shrimp - 350 g
Bouillon cube - 1 pc.
Garlic - 2 cloves
Ginger - 2 cm
Onion - 1 pc.
Vegetable oil - 1 tbsp.
Water - 300 ml
Chili pepper - 1 pc.
Mint - 10 g
Basil - 10 g
Coconut milk - 400 ml
Curry paste - 2 tbsp.
Lime - 0.5 pcs.
Rice noodles - 250 g
Sugar - 1 tsp.

1. Let's start cooking by chopping vegetables. To do this, cut the onion, garlic, ginger and chili pepper into very small cubes.
2. Heat the vegetable oil in a frying pan and fry the vegetables over medium heat until soft, about 6-7 minutes. Add fish stock or fish stock cube to the pan.
3. Shrimp (you can take shrimp of different sizes), remove heads, shells, and intestinal veins.
4. Place the shells and heads in the frying pan with the vegetables. Add water if you, like me, use a bouillon cube. Cook vegetables with heads and shells over medium heat to obtain a very rich fish broth, 15 minutes.
5. Remove the shrimp shells and heads from the frying pan, and puree the vegetables in a blender. Pour the resulting mass into a saucepan.
6. Add coconut milk and curry paste to the broth. Add salt and sugar to achieve flavor balance.
7. Let the broth boil and then add the shrimp. Cook the shrimp in the broth for 5-7 minutes.
8. Meanwhile, boil the rice noodles according to the instructions on the package and drain the water.
9. Serve the finished soup as follows: place rice noodles in a portioned plate and fill them with broth and shrimp. Garnish with fresh chili pepper, basil and mint.
