Beef cutlets with zucchini are very tasty, dietary and satisfying. Zucchini makes the cutlets more juicy and soft.

Prepare all the necessary ingredients for cooking beef cutlets with zucchini in a frying pan.

Beef - 600 g

Zucchini - 200 g

Onions (large) - 1 pc.

Garlic - 1-2 cloves

Salt, ground black pepper - to taste

Chicken egg - 1 pc.

Semolina - 2 tbsp.

Vegetable oil - 100 ml (for frying)

1. Wash the meat under cold running water, dry and cut into small pieces. Then pass through a meat grinder. Of course, you can buy ready-made minced meat in the store, but I prefer to cook it myself, because it is not so difficult, but you will be completely confident in the quality of the product.

2. Peel the onion and garlic and also grind through a meat grinder. Add the resulting pulp to the bowl with the minced meat.

3. Add the zucchini grated on a medium grater. Just before this you need to squeeze out the excess liquid from it.

4. At the very end, add salt, ground black pepper, chicken egg and semolina. You can expand the list of seasonings based on your taste preferences.

5. Mix the minced meat thoroughly and beat it on the bottom of the bowl to soften the fibers. Then cover the container with a towel/lid and let stand for about 10 minutes. During this time, the semolina will be saturated with moisture (swell) and make the mass more loose, due to this the cutlets will turn out soft.

6. Form the minced meat into round or oval shapes. Place them in a frying pan heated with vegetable oil.

7. Fry the cutlets over moderate heat, about 4 minutes on each side, until nicely browned.

8. That’s all, delicious beef cutlets with zucchini are ready. They are juicy on the inside and golden brown on the outside.

9. Serve the minced beef and zucchini cutlets hot with any side dish. I really like it with boiled potatoes, fresh vegetables and herbs.
