With all the abundance of all kinds of desserts, one of my favorites is choux pastry (choux, eclairs, profiteroles) with custard. In my opinion, this cream is very refreshing in the summer. Well, the choux pastry itself is not so hard on the stomach in the hot months. The recipe I want to share is not new. There are a lot of them floating around on the Internet in different variations and designs. I want to share this with you. Coffee lovers will appreciate the dessert.

To prepare the Paris-Brest cake with coffee cream, we will prepare the products according to the list.

Ингредиенты

Dough:

Milk - 90 g

Water - 90 g

Butter - 70 g

Wheat flour - 125 g

Chicken eggs - 3-5 pcs.

Salt - a pinch

Sugar - a pinch

Cream:

Milk - 500 ml

Instant coffee - 1 tbsp.

Sugar - 100 g

Chicken egg yolk - 5 pcs.

Wheat flour - 40 g

Dark chocolate - 30 g

Almond petals - optional

Рецепт

1. Prepare the custard. Bring the milk to a boil, add instant coffee. Mix. Let's put it aside.

2. Mix the yolks and sugar with a whisk. Let's add flour. Mix.

3. Then pour the yolk-coffee mixture into coffee-chocolate milk.

4. Place the mixture over medium heat and cook, stirring, until thickened. The custard is ready.

5. Cover it with film and let it cool completely.

6. In the meantime, let's prepare the choux pastry. Mix milk and water, add butter, salt and sugar. We put it on gas and wait for the butter to completely melt. Without removing from the stove, add flour and mix vigorously so that there are no lumps.

7. Stir until a crust like this appears at the bottom. The dough will come together into a firm lump.

8. Remove from heat. Let the dough cool slightly, then add the eggs one at a time and mix.

9. You will get this dough.

10. Transfer it into a cornet and place it on a baking sheet, as shown in the photo. Sprinkle with almond petals. Bake in preheated temperature to 190 degrees for 15-20 minutes. Find your way around your oven!

11. The cake ingredients are ready.

12. Remove them from the baking sheet and cool completely on a wire rack.

13. Assembling the cake. Cut it with a knife (it is convenient to use a bread knife). Spread the cooled cream...
