I fell in love with this soup from the first spoon, it is so delicious! And it’s easy to prepare!

Portuguese Lemon Mint Chicken Soup is a soup you need to make at least once! My husband is such a big fan of soups, but he also enjoys eating this soup, no matter how often I cook it. And I can’t say that its preparation requires any special ingredients - everything is simple, affordable and VERY tasty!

We will prepare all the products according to the list. You can use any chicken meat except chicken breast, we need rich chicken broth for this soup, and breast is not suitable for this.

Ингредиенты

Chicken - 600 g

Lemon - 1 pc.

Orzo pasta or rice - 150 g

Celery - 1 stalk

Onion - 1 pc.

Chili flakes - on the tip of a knife

Salt - to taste

Ground black pepper - to taste

Fresh mint - 10 g

Parsley - 2 sprigs

Olive oil - 1 tbsp. (optional)

Water - 1.5

1. Place chicken meat cut into portions into a pan; I used wings and thighs.

2. Add sprigs of mint and parsley. Leave a couple of mint sprigs for serving the soup.

3. Chop the celery stalk and also add it to the pan.

4. Add chili pepper flakes.

5. Peel the onion and cut it into four parts. Add to the pan. BUT, I came across a version of this soup in which the onion was first chopped and fried until transparent in olive oil. I have indicated the amount of olive oil in the recipe if you want to add fried onions to the soup.

6. Remove the zest from the lemon and add it to the pan.

7. Pour about 1.5 liters of water into the pan, add 1 tsp. salt and put the pan on the fire. First, cook over high heat and remove any foam that forms. Then reduce the heat to medium and cook the broth until the chicken is completely cooked.

8. Remove the chicken from the pan and strain the broth.

9. Cut the cooled chicken meat into small pieces.

10.Place the pan with chicken broth on the fire. As soon as the broth boils, pour the orzo pasta into it.

11. Cook the soup for another 10-12 minutes, until the pasta is completely cooked. After this, add lemon juice to the soup. Add juice in portions and taste the soup. Add salt if needed. Chop and add a few mint leaves to the pan. Remove the soup from the heat.

12. Portuguese chicken soup with lemon and mint is ready! To serve, place some chicken in a bowl and fill it with chicken broth with orzo pasta, lemon and mint.
