An ancient drink based on honey and spices in a modern interpretation: with the addition of sea buckthorn and orange.
Traditional drink of Russian cuisine. In winter it was served hot, but in a bathhouse or on a hot summer day sbiten was served cold... The drink was prepared not only at home, it was sold at folk festivals or simply in crowded places. The seller of sbiten was called “sbitenschik”.
The drink is not only tasty, it is very healthy. Perhaps, sbiten can be called a Russian alternative to mulled wine, and just like mulled wine, sbiten can be alcoholic or non-alcoholic.
I suggest trying the delicious, warming and bright non-alcoholic sbiten with sea buckthorn, honey, oranges and spices.
Let's prepare the ingredients for sea buckthorn whipping: sea buckthorn can be used either fresh or frozen. You can add cardamom to cinnamon and cloves.

Water - 1 l 300 ml
Honey - 150 g
Ginger (root) - 40 g
Cinnamon (sticks) - 2 pcs.
Cloves (buds) - 5 pcs.
Orange - 2 pcs.
Sea buckthorn - 80 g

1. If sea buckthorn is frozen, there is no need to defrost it. Place the berries in a small saucepan and add 300 ml of water.
2. Bring the mixture to a boil and cook over low heat for 15 minutes, periodically skimming the foam from the surface. Then strain the broth, lightly pressing the berries with a spoon so that the sea buckthorn pulp gets into the liquid.
3. In parallel with the sea buckthorn broth, prepare a spicy honey base. To do this, cut two oranges into slices and place them in a saucepan. Add cinnamon, cloves and peeled and cut into pieces ginger. As you know, honey loses its beneficial properties during heat treatment, so add some honey to the saucepan, leaving 1-2 tbsp. We will add it later to the finished sbiten.
4. Pour 1 liter of water into a saucepan and place it on medium heat. Bring the honey base to a boil, then reduce the gas, loosely cover the saucepan with a lid and cook for 10 minutes, then strain the base through a sieve.
5. Sbiten is almost ready. All that remains is to combine the sea buckthorn decoction with a spicy honey base. Add the remaining honey, stir until the honey dissolves, and you can serve the hot, aromatic sea buckthorn whipped milk to the table.
