Creamy potato soup with bacon

A very hearty and flavorful puree soup can be prepared for the whole family using this recipe.
I really love this soup for its ease of preparation. I cook it without frying the vegetables in a frying pan in oil, which makes the soup more healthy. And it becomes nourishing and aromatic thanks to cheese and cream. The bacon adds a slight smoky flavor to the soup.
Prepare all ingredients for making creamy potato soup with bacon. For this soup, it is better to use fast-cooking potato varieties.

Potatoes - 400 g
Bacon - 30 g (2 strips)
Onions - 1 pc.
Garlic - 1 clove
Cream - 200 ml
Processed cheese - 100 g
Salt - to taste
Ground black pepper - to taste

1. First, fry the bacon strips either in a dry frying pan until crispy or as I did by placing the bacon strips in a microwave safe dish and covering it with cling film. Cook bacon in the microwave for 1-1.5 minutes at 600 W. Let the bacon cool.
2. Peel and wash potatoes
3. Cut the potatoes into small cubes.
4. Peel the onion and garlic and cut into small cubes.
5. Place potatoes, onions and garlic in a saucepan. Pour 1.5 liters of water over the vegetables. Cook the soup for 20 minutes after the water boils, until the vegetables are soft.
6. During cooking, add salt and ground black pepper to taste.
7. After 20 minutes, pour cream into the soup, heat the soup for 2-3 minutes, but do not let it boil.
8. Add cream cheese at the very end. Mix all the soup ingredients well until the cheese is completely dissolved.
9. Puree the soup using a blender.
10. Serve creamy potato soup in portions, garnished with pieces of crispy bacon.
