If you, like me, are not a great cook, but want delicious cookies with nuts for tea, prepare them according to this recipe. Fast, simple, delicious!
Shortbread cookies with nuts are the simplest version of tea cookies, in my opinion. Using this recipe, you can make cookies that taste different each time if you use other nuts. You can, of course, just add nuts to the dough, but I like the cookie version with nuts on top.
In order for the cookies to turn out truly shortbread and melt in your mouth, the butter should first be softened by removing it from the refrigerator and leaving it for half an hour at room temperature. In addition, this will also reduce the cooking time for the cookies.
We will prepare all the products according to the list. You can use any nuts; I will bake cookies with peanuts, which should be finely chopped first. I’m lucky; our supermarkets sell ready-made nut crumbs.

Flour - 250 g
Butter - 125 g
Powdered sugar - 100 g
Chicken egg - 1 pc.
Egg white - 1 pc.
Baking powder for dough - 1 tsp.
Nuts (peanuts) - 50 g
Salt - 1 pinch

1. Place softened (not melted!!) butter in a bowl, add powdered sugar; you can use finely ground sugar instead of powdered sugar.
2. Using a fork, mix the powdered sugar and butter well.
3. Beat one chicken egg into a bowl.
4. Mix all ingredients. Add salt and baking powder for the dough.
5. At the very end, add flour in small portions and knead the dough.
6. Cover the bowl with the finished dough with film and place in the refrigerator for 20-30 minutes.
7. Grind the nuts into crumbs. Place them in a bowl and add the white of one egg.
8. Gently mix the nuts with the protein.
9. Roll the dough into balls the size of a walnut.
10. Place the balls on a baking sheet covered with baking paper. I have a high-quality baking sheet, nothing sticks to it, so I didn’t do this.
IMPORTANT: leave a little more distance between the cookies, they will increase in size during baking, I wanted to fit all the cookies on one baking sheet, and they ended up very close to each other. Lightly flatten each dough ball and use a teaspoon to spread the entire nut-white mixture over the top of each cookie.
11. Place the baking sheet with cookies in an oven preheated to 170 degrees C for 15-20 minutes. Take the finished shortbread cookies with peanuts out of the oven and let them cool slightly, about 7-10 minutes, right on the baking sheet.
12. Delicate shortbread cookies with nuts melt in your mouth! Enjoy your tea!
