Asian spring rolls are becoming very popular not only in their homeland.
Some modern housewives have begun to cook this amazing and unique-tasting dish from rice paper more often than ordinary stuffed pancakes. Thin crispy rolls with meat filling will fit well into a buffet table, and will also perfectly complement the holiday menu as an unusual snack.
To prepare fried spring rolls with chicken, you will need skinless breast fillet, green onions, carrots, Funchoza green bean vermicelli, round sheets of rice paper, seasonings and additives for minced meat to taste, odorless sunflower oil and any hot Asian sauce. We settled on ginger sauce with bell pepper.

Vermicelli “Funchoza” - 45 g
Green onions - 1 bunch

1. First, prepare the filling, as for regular stuffed pancakes. The breast must be twisted in a “large” meat grinder or chopped with a knife.
2. Ready minced chicken is seasoned with salt and pepper. You can add your favorite spicy spices.
3. Next, you need to chop the green onions and add them to the filling.
4. Cut the carrots into small strips or run them through a vegetable cutter.
5. Mix the main ingredients until the minced meat is homogeneous.
6. Before use, funchoza is poured with boiling water for 2-3 minutes, and then cut with scissors. Add the finished bean vermicelli to the minced meat and mix everything again.
7. Next you need to prepare the rice paper. Carefully remove it from the packaging.
8. Take the first leaf and place it on a flat dish filled with warm water.
9. To prevent the paper from curling, lower it to the bottom, holding it with your fingers. We do it very quickly, because after a few seconds the hard circle will transform into a soft and quite sticky pancake. We advise you to transfer the sheets of rice paper to the mat after 5 seconds in the water, before they are too soft - this will make stuffing easier.
10. We collect a small amount of filling into a long flat cutlet and place it at the very bottom of a rice sheet, placed after water on a bamboo mat.
11. We wrap it like cabbage rolls, but first we fold the circle together with the minced meat in half.
12. Choose the length of the roll according to your wishes. The main thing is that the filling is well hidden inside.
13. Place the finished rolls on a special dish at a short distance from each other. Rice rolls tend to stick together.
14. Fry spring rolls in heated sunflower oil on both sides for no more than 7 minutes. The rice paper will bubble slightly during cooking - this is normal. If desired, the rolls can be dusted with flour (for a crispier crust).
15. Remove the rolls from the pan and immediately bring them to the table before the crust becomes limp.
16. Rice pancakes stuffed with minced chicken and topped with spicy ginger sauce are simply irresistible.
