Canned pineapples - 1 can (380 g)
Cottage cheese - 400 g
Condensed milk - 120 g
Sour cream - 200 g
Instant gelatin - 20 g

1. First of all, open a can of canned pineapples and pour the juice from it into a bowl, add water to this juice so that the total mass of liquid is 400 ml. Add instant gelatin, stir and let it swell. After 5 minutes, heat the gelatin to 60 degrees and leave to cool.
2. While the gelatin is cooling, rub the cottage cheese through a sieve so that there are no lumps in it.
3. Add sour cream to the cottage cheese and stir thoroughly.
4. Next, pour condensed milk into the curd mass.
5. Now it’s better to beat the mass with a mixer so that the consistency is smooth and homogeneous.
6. After a minute, pour in the gelatin and continue whisking until the gelatin is completely combined with the curd mass.
7. Now add pieces of canned pineapple and mix gently with a spoon.
8. It is best to use silicone molds for dessert, because it is convenient to take the dessert out of them after hardening. My silicone mold is small and soft, so to ensure it would hold its shape after I poured the curd mixture, I placed it in a larger, sturdy mold. I also got two small cupcake-shaped desserts. Place the molds in the refrigerator to harden, preferably overnight.
9. In the morning, take out the molds and place the Old Riga curd dessert on a plate.
10. A large dessert can be cut into portions and served with morning tea or coffee.
