Turkey liver - 300 grams;

Turkey heart - 200 grams;

Onion - 2 heads;

Butter 300 grams;

Rosemary - 3 sprigs;

Ground allspice - 1 pinch;

Pink peppercorns - 1 teaspoon;

Cognac / rum - 30 ml;

Cranberries or lingonberries for decoration;

Salt to taste.

Рецепт

1. Boil the hearts, simmer the liver along with onions and two sprigs of rosemary in 100 grams of butter until tender; at the end of cooking, pour in cognac, add salt and allspice.

2. Then grind the hearts and liver, along with what it was stewed with, using a blender into a homogeneous mass.

3. Divide the pate into molds, bowls, etc.

4. Melt 200 grams of butter along with rosemary leaves and pink pepper.

5. Pour the aromatic oil over the surface of the pate. Decorate/add the pate as desired, for example with cranberries or lingonberries, and cool.

6. Turkey liver pate is ready.

7. Serve it on any bread, such as fragrant focaccia.
