Apple salad with dates

Tart apples, sweet dates and alcohol and marzipan dressing in a fig cup are a fruit salad option for adults.
This salad may well be included in the holiday table menu, because it is not only tasty, but also original - a creative presentation of the dressing can surprise guests.
To prevent apple salad with dates from turning out cloying, it is better to use apples with sourness. I used two types of fall apples. They are juicy, crispy and even a bit harsh, but it is this property that helps the salad not to “go limp” for several hours.

Dates - 150 g
Apples (sour) - 6 pcs.
Lemon juice - 2 tbsp.
Sour cream (fat content 15%) - 4 tbsp.
Marzipan - 30 g
Cognac - 2 tbsp.
Powdered sugar - to taste
Figs - 4 pcs.
Mint - for serving
Almonds - 1 handful

1. Squeeze the juice from half a lemon (you will need 2 tablespoons of juice), pour a piece of marzipan with cognac or other strong alcohol to taste and leave to soften while you work on the fruit.
2. Peel the apples and remove the seed capsule. Cut the peeled apples into thin strips and immediately mix with lemon juice so that the apples do not darken. We remove the seeds from the dates and also cut them into thin strips, mix them with apples.
3. Marzipan, after lying in alcohol, became soft, rub it with a spoon until completely dissolved in cognac and add to sour cream. Stir, add powdered sugar to taste - the dressing turns out to be quite “drunk”. Coarsely chop the almonds with a knife.
4. Place salad in portioned bowls. We cut the figs crosswise (a deep, but not through cut), press with our fingers at the base of the fruit so that the fig opens like a flower. The result is an edible cup. We install it by lightly pressing it into the salad for stability.
5. Fill the fig cup with sour cream dressing, allowing it to drip into the salad, garnish with mint leaves and coarsely chopped almonds. Apple salad with dates is ready.
