Warm salad with oyster mushrooms and spinach is an excellent option for a light dinner or a warming snack that will pleasantly diversify the menu during the cold season.
A salad base of fresh spinach and sautéed oyster mushrooms adds heartiness and volume to the dish, while a spicy dressing and sprinkles of crispy slices of toasted whole grain bread add bold flavor and a satisfying texture. The salad turns out to be pleasantly warming, healthy and light, but at the same time nutritious enough that you can safely use it as an independent dish. Try it!
To prepare you will need these ingredients.

Oyster mushrooms - 350 g
Spinach – 250 g
Salad onion – 80 g
Sweet pepper – 120 g
Bread – 100-160 g
Olive oil – 4 tbsp.
Garlic - 2 cloves
Dried oregano – 1 tsp.
Dried basil - 1 tsp.
Grain mustard – 2 tsp.
Lemon juice – 3 tbsp.
Salt - to taste
Ground black pepper - to taste

1. Cut the bread into small cubes and fry in a dry frying pan for 5-7 minutes, stirring occasionally, until the pieces are crisp and lightly browned.
For cooking, you can use any bread, but ideally whole grain. I used a whole grain corn baguette, which added a pop of color to the salad with its sunny color.
2. Wash the spinach leaves, dry them, tear them into small pieces with your hands and place them in a deep salad bowl. Add thinly sliced onions and bell peppers.
3. Heat olive oil in a frying pan. Add the sliced garlic cloves and cook over medium heat for about 1 minute until the garlic is lightly browned.
4. Then, slightly reducing the heat, add dried basil and oregano, mustard and lemon juice to the pan.
5. Add the pre-washed oyster mushrooms, dried with a paper towel, increase the heat again to medium, stir and fry for 7-8 minutes. Large mushrooms can be pre-cut.
6. Turn off the heat, add salt and ground black pepper to taste. During cooking, the mushrooms will release juice, which, mixed with oil and lemon juice, will serve as a hot salad dressing.
7. Add the fried mushrooms along with the resulting hot dressing to the salad bowl. Mix everything thoroughly until the spinach becomes softer from interaction with the hot ingredients.
8. Add crispy pieces of toasted bread to the salad bowl.
9. Mix everything again. Taste the salad, add a little more salt and ground black pepper to taste if necessary, and then serve.
