Vegans, vegetarians and fasting people, this salad is for you! How I love this salad! It is especially good during Lent! But my vegetarian friends eat it almost every day. The salad is really hearty, healthy, tasty and is very quick and easy to prepare. A salad with chickpeas, avocado and cherry tomatoes is a complete storehouse of vitamins, chickpeas are a source of vegetable protein, avocado is a unique healthy fruit that is very popular with vegans and vegetarians.

In this salad, avocado plays the role of dressing. Avocado can be mashed into a puree, mixed with olive oil and lemon juice and seasoned with this mixture on a salad. Or you can simply chop the avocado like the rest of the salad ingredients. I preferred the second option.

Canned chickpeas - 150 g

Avocado - 1 pc.

Cherry tomatoes - 4-5 pcs.

Red onion - 0.5 pcs.

Lemon - 0.5 pcs.

Olive oil - 1 tbsp.

Salt - to taste

Ground black pepper - to taste

Рецепт

1. Drain liquid from canned chickpeas. Transfer the chickpeas to a bowl.

2. Cut the avocado in half lengthwise and remove the pit. Carefully remove the avocado pulp with a spoon and cut it into small cubes.

3. Place the avocado in a bowl with the chickpeas and sprinkle the fruit with lemon juice to prevent it from darkening.

4. Wash the cherry tomatoes and cut them into quarters.

5. Add tomatoes to the salad.

6. Cut the red onion into quarter rings.

7. And also put it in a bowl with the rest of the salad ingredients.

8. Salt and pepper the salad to taste.

9. Season the salad with olive oil. Mix the contents of the bowl well.

10. Salad with chickpeas, avocado and cherry tomatoes is ready. Serve it in portions.
