Eclairs are baked goods that are ideal as a tasty and inexpensive dessert. Their preparation requires practically no money or time. As a filling, you can use not only sweet creams, but also soft cheese, caviar, pate or salads, because the dough has a neutral taste.
To get a sweet and delicate dessert, you can prepare and fill eclairs with delicious custard. It is easy to prepare, has a great taste and a pleasant structure.

Milk - 500 ml
Sugar - 150 g
Eggs (yolks) - 5 pcs.
Butter - 50 g
Starch - 30 g
Vanillin - 2 g

1. Pour milk into a saucepan, add sugar and vanillin.
2. Separate the egg yolks from the whites and beat them a little. Pour the yolks into the saucepan and bring to a boil while constantly stirring. No need to boil!
3. Add potato starch in one portion and, without ceasing to stir (it’s better to use a whisk for this), bring to a boil and cook for 1-2 minutes. Instead of starch, you can use wheat flour. In this case, the cream only needs to be brought to a boil. The thickness of the cream can be adjusted by the amount of starch - the more it is, the thicker the cream turns out.
4. Then add the butter and, stirring, wait until it has completely melted and remove from heat.
5. The custard for eclairs turns out to be very tender, homogeneous and pleasant to the taste. But! If it turns out with lumps, it’s not a problem. You can save it by grinding it through a fine sieve, and it will become smooth, shiny, appetizing and very tasty.
